Hard Candy

    G.L.E.:

    Time Allowance: Two 30 minute class periods

    Description: This task will be used during a study of ''Little House in the Big Woods''. Students observe the making of hard candy and then must write a procedural paragraph including their own directions for making the candy--steps in a process, Laura Ingalls Wilder


    Classroom Component: Instructions for Administration: Prepare students for the demonstration by explaining the need to pay close attention to the steps necessary to cook the hard candy. Provide a well rehearsed cooking demonstration and discussion of the process and materials used. At the conclusion of the demonstration and the discussion present the students with the Performance Task Packet. Make sure the students understand the Student Prompt and review the scoring guide. Pre-Assessment Instructions: The students will need to have prior knowledge of and be reminded of time order words, sequencing of ideas, and clarity of description. Hard Candy Recipe Materials Needed 2 quart saucepan, candy thermometer, 3 large cookie sheets, measuring cups and spoons, standard stove top utensils and hot pads Ingredients:

    2 cups of sugar food coloring (optional)
    1 cup of water 1 lb. confectionery sugar
    1 cup of Karo syrup pinch of salt
    1 tsp. real oil base liquid flavoring (or 2 tsp. imitation oil base liquid flavoring)
    Directions:
  • Prepare the cookie sheets with one pound of confectionery sugar spread 1/4 inch deep and patted down.
  • Combine the sugar, water, Karo Syrup, and salt in a two quart saucepan.
  • Begin cooking over medium heat stirring occasionally until sugar is dissolved.
  • Place candy thermometer (not touching bottom of pan) in mixture when it begins to boil.
  • Cook on medium heat to 300 F. This takes approximately 20 to 30 minutes. Candy will rise very quickly from 250 to 300 F very quickly. If candy mixture begins to smoke or turn very yellow, it''s getting too hot.
  • Immediately remove from heat, add food coloring (optional) and flavoring. Stand back to stir in coloring and flavoring.
  • Pour candy over confectionery sugar in streams 1/2 to 1 inch wide to allow for uniform cooling and easy breaking.
  • When cool, break into manageable pieces and eat.
  • In order to have an effective demonstration, it is necessary to practice preparing the hard candy ahead of time. Hard Candy Student Prompt We have been reading the book Little House In the Big Woods and we have discovered many similarities as well as differences between our lives today and the Ingall''s lives in the 1860''s. In the seventh and eighth chapters the author talks about the harvesting of maple sap and making it into sugar and candy. You have now just observed the same process used by the pioneers, only we flavored our plain syrup to make hard candy. Complete the recipe card to include the directions on how to make the hard candy. Be sure to use complete sentences, clear descriptions and sequence the items in a logical manner using time order words. Hard Candy Recipe Card

    3 points:
    • I have clearly identified at least five of the steps necessary to make hard candy.
    • I have accurately described the procedure used in at least five of the steps.
    • I have correctly used three time order words.
    • My paragraph contains one, or two, errors in the use of complete sentences, correct grammar and punctuation.
    • My paragraph may need more attention to the construction of a logical order OR writing to make it easier to follow.
    2 points:
    • I have clearly identified at least three of the steps necessary to make hard candy.
    • I have accurately described the procedure used in at least three of the steps.
